French Macarons for Mother’s Day?!

i recently opened a store on Etsy selling french macarons. im currently talking to a owner to see if i can sell my macarons at his ‘store’.

restaurant weeks are unavoidable in my life since my birfuday and our anniversary all land on restaurant weeks. not a big fan of it and never had really good RW experiences, but it’s still tempting every time. yesterday was me and pork belly’s 3rd anniversary so i picked t.w. food in cambridge.

we opted for the wine pairing as well. i specially asked for all whites for me since i dont drink any red.
we had:
bishop’s peak chardonnay
merlot
muscadet
and something else i forgot the name
wine was really good and went well with the food.

CRÈME BRÛLÉE FOIE GRAS
this was so awesome. foie gras was super creamy and it tasted like creme brulee like the name. i most licked my plate =}

SEA SCALLOP pan seared, brussel sprouts, house cured bacon
scallop was well executed. it had a citrusy tint which gave a refreshing kick to it. the flavor of the house cured bacon was transferred to the brussel sprouts which gave it a nice bacon flavor.

BRAMBLY FARM PORK loin, cotechino sausage, garlic polenta, braised cabbage
this was a lil underwhelming comparing to the rest of the food we had. the pork wasnt tender. i expect all pork fat to have melt in your mouth texture but this wasnt the case. sausage was nicely flavored tho.

DUCK CONFIT crispy “bone-in” thigh, quinoa, radish, rhubarb and pinenut pistou
this was a fantastic dish as well. the skin was crispy, meat was super tender and non of the ducky taste, everything else on the dish really blended well.

BOSTON CREAM TARTE vanilla cream, valhrona chocolate, almond
this was really enjoyable. very rich, creamy without being heavy. all the good characters of a dessert

BUDINO dark chocolate custard, candied hazelnuts, sea salt, olive oil
i was in love with this. never thought sea salt and olive oil can make a super good dessert. the dark chocolate was really really rich. the candied hazelnuts went really well with the sea salt and olive oil.

the meal at t.w. food was really really solid especially for restaurant week. i think they really know how to play between savory and sweet such as the creme brulee foie gras and the sea salt/olive oil with the dark chocolate.

the service was professional and all the staff were pretty knowledgeable. if you still looking for a place to dine for restaurant week. i highly recommend t.w food.

as mentioned in my last post, ive been trying to make french macarons.

my food scale, piping bags, strainer, thermometer came in so i made my 2nd attempt. i still did french method cuz it seems the more legit way to make it.

however, i havent tasted them yet. porkbelly said they are super good but i cant trust him cuz he wouldnt dare to say its bad if they were.

my wisdom teeth hurt so bad that i can only drink liquids. i even have hard time swallow things :’(

pain killer doesnt even work. after 3 days of pain and suffering, my neck started to hurt, i have a headache on top of my toothache mouth ache, i finally dragged myself to the dentist today and she prescribed me antibiotics. hopefully i can eat soon!!!!

if you would like to make some macarons, there are really billions of recipes and youtube videos out there so there is no need for me to write up another one. i suggest watch a lot videos and do a lot research before u start.

there are a lot of recipes out there with different measurements, so i kinda combined and figured out my own ratios.
so here is what i used:

every 1 g of egg white, you use 1.2 grams almond flour, 2 grams of powder sugar, and 0.5 grams of sugar. 

i guess u do have to do a little math here.

its been a while since i visited so my memory is so vague now. i remember they were being generally decent, nothing mind blowing tho. they do have some interesting flavors such as:
pistachio – white chocolate pistachio ganache
gianduja – the classic mix of hazelnut and milk chocolate
yuzu- yuzu cream with a yuzu marmalade center
jasmine + green tea – jasmine infused white chocolate ganache
lavender + honey – lavender + honey flavored buttercream
mandarin and wasabi – mandarin was too strong, couldnt taste the wasabi at all.

i loved the ambience and scenery of L’Auberge Chez Francois. prefect for any occasions or a date. A little perfect getaway from the hustle and bustle of the city. the food was delicious and very well made, but nothing was too mind blowing. attention to details. the service was extremely polite and professional. the entire experience was relaxing and enjoyable.

i always wanted to check out no. 9 park since i like most barbara lynch restaurants/bars. i’d say no. 9 park was rather disappointing. very average uncreative dishes. i wasnt digging the ambience of the restaurant either. i dont think i would return in the future.

Au Pied de Cochon @ Montréal, QC

i went to montreal labor weekend for my friend’s biirfuday. we had an epic time there which involved with heavyyyy drinking, major lack of sleep, and hangover and result of that -> lost of appetite.

we made a reservation for au pied de cochon a month in advance and still got a 10:30pm reservation for sunday. i was dying to go there cuz it was featured on one of the anthony bourdain shows. being the first meal of the day at 10:30pm, i was still not hungry. the meal was supposed be super heavy, but because of my hangover, i could only eat a lil bit of it before i started to feel nauseous. bummmmer :’(

i still did enjoy the meal a lot, i would have enjoyed it even more if i werent in a such bad condition tho.

ok without further ado lets see what au pied de cochon is all about.

the restaurant was still mad packed when we arrived at 10:30pm on a sunday night. this pic was taken at 12:30am when we were leaving.

au pied de cochon is heavy on foie gras, but none of us is too crazy abt it so we ordered the foie gras poutine.

Foie Gras Poutine – this was soooo yummm. im not a huge fan of foie gras, but it was soo goood i had like 4 pieces of foie gras.

Pickled Tongue – i think this was the best beef tongue ive ever had. zero gameyness, super tender, well flavored, good texture.

beef tartare – i love all kinds raw meat, but i didnt like this. i didnt like how its marinated. i think like the strong alcohol taste. very gamey as well.

one of the special of the day – shepherd’s pie. of course they would have shepherd’s pie for special on sunday night. you’d know what i meant if you read anthony bourdain’s book. anyways, we did enjoy this a lot.

ohhhh look at all that fatttt. the duck wasnt ducky at all which i liked. it’s jus tooooo oily for me to eat it so i only had couple bites.
